After decades of procrastination,  Happy Vines Personal Chef, Remie Law, finally took the plunge and earned himself a  City & Guilds LondonDiploma in Food Preparation & Culinary Arts in 2008. Jamie Oliver started off with this same qualification that eventually launched his starred career. Remie, on the other hand, have no ambitions for stardom. For Remie, this course confirmed, strenghtened & refined his cooking techniques and style that kept him healthily fed, all these years. The course was also to reinforce and complement his wine expertise via-a-vis complementary wines with Asian foods.
" Wine is the intellectual part of a meal."
Alexandre Dumas' Dictionary of Cuisine, 1873

Thus, the focus of this website is just that. A journey to discover, identify, define and refine the types and styles of wines that will complement our varied range of Asian tastes and cooking techniques. To prove or disprove, discuss and debate the various wine and Asian food matchings made in heaven or hell. Or simply provide acceptable choices.
